Flipping Fantastic Pancakes

Ingredients: 
110g plain flour
2 eggs
225ml milk mixed with 50ml water
50g butter

Now, let’s get mixing and flipping…
 

Sift the flour and salt into a large mixing bowl, making a hole in the centre and break the eggs into it. Whisk the eggs, gradually including the flour around the edge of the bowl as you whisk.

Add small quantities of the milk and water mixture gradually, still whisking (don't worry about any lumps, they’ll dissolve as you whisk) until all the liquid has been added. Melt the 50g/2oz of butter in a pan and add 2 tablespoons to the batter and whisk. Pour the rest into a bowl and use it to smear the pan before you cook each pancake. Heat the buttered pan and ladle the mixture in, moving it around so the mixture covers the whole pan.
 
Once that side is golden brown, flip the pancake and cook on the other side. Once cooked, slide onto a plate and repeat until you have all the pancakes you desire/the batter runs out.
 
Suggested toppings:
Lemon juice and sugar
Nutella
Chopped Bananas with cinnamon and nuts
Ice cream (any flavour)
Maple syrup
Any flavoured jams
Strawberries and cream
