Menemin

This is a traditional Turkish dish, ideal for a quick lunch.
To start warm a large deep frying pan with some olive oil and add one tin of chopped tomatoes (per person). Simmer until thick and rich.
Beat two eggs (per person) in a separate bowl and then add them straight into tomato. Stir constantly – the eggs will cook and whiten quickly. As they start whitening, add a large handful or two off crumbled white feta cheese (or similar).
The dish is ready when the eggs are fully cooked and cheese has slightly melted.
To finish add a little pepper, and finely chopped fresh parsley. Eat as is with a large knob of fresh white Turkish style white bread (coated in poppy/sesame seeds).
Dead easy. Super quick. Yummy!
Optionally, you can add diced onions at the start (before the tomato), simmer till brown then add the tomato and then continue as above. You could also try adding finely sliced peppers or diced potato too.
