Village Salad

Ingredients: 
diced tomatoes (big fat ones)
diced cucumber thinly sliced
onions thinly sliced
red/green bell peppers
feta cheese either cubed or crumbled (warning - this can be a very salty cheese, but essential)
kalamata (black) olives
a little oregano on top if you’re feeling exciting
lettuce isn’t traditionally used but chop up small and add if desired
olive oil, red wine vinegar and pepper

I write this sat on the terrace of my Cyprus hotel, staring out over the blue-green Mediterranean sea, listening to light jazz, and happily ignoring the pile of uni work beside me. Ahh, this is the life.

Well... almost. See, it’s been a little less than a tropical dream with some grey skies and wind. Not enough to stop people from braving the pool or sunbathing with their shorts on, but I can’t help but be reminded of the average day back at uni.

So let’s mix it up; I’ve got the grey of Leeds here, why not have the food of Cyprus there? This is a deliciously quick and easy salad that’s light but filling. It’s called koriatiki although sometimes you’ll see it as horiatiki or even xoriatiki (thanks to the English language’s lack of a “kh” sound). More basically, it’s called a Village Salad.

The price is a little high for a salad once you include the cost of the feta and olives, but it’s worth it and it’ll get greens in your fridge. Takes 5-10 minutes with all the chopping and tossing so it’s nice and quick.
